Job summary

Radiant Hospitality Company is seeking a Head Chef to lead the kitchen of a new modern African restaurant in Dubai. This founding culinary leadership role involves menu ownership, brigade construction, and pre-opening discipline from scratch.

You will recruit and coach the kitchen team, drive food safety and cost controls, and partner with the GM/CEO on profitability. Must be based in UAE with right to work; salary AED 25,000 per month plus housing and benefits.

Qualifications

• Head Chef or strong Sous Chef with premium, high-volume restaurant experience.
• Experience in African or African-influenced cuisine is highly desirable.
• Ability to write and defend commercially viable menus with costing.
• Proven track record of training chefs and building a brigade.
• Pre-opening leadership including recruitment, training and launch.
• Strong sourcing instincts and supplier relationships for specialty produce.
• Solid knowledge of HACCP and food safety compliance.

Responsibilities

• Own the menu end to end: concept development, seasonality, dish creation and costing.
• Build a modern African-influenced menu and tell its story to guests and staff.
• Recruit, train, roster and retain the kitchen brigade; foster a respectful culture.
• Lead pre-opening recruitment and training; set standards and discipline.
• Own kitchen commercials: food cost, gross margin, portion control and wastage.
• Deliver the kitchen's contribution to the venue P&L with GM and CEO oversight.
• Implement systems for ordering, stock control, and kitchen scheduling.
• Establish relationships with growers, fishermen, and regional producers to ensure provenance.
