Job summary

Radiant Hospitality Company is opening a modern African restaurant in Dubai and seeks a Head Chef to lead the kitchen from pre-opening. You will own the menu, build the brigade, and establish discipline, sourcing, and food safety.

You will recruit and coach the team, develop the concept, and drive kitchen profitability while collaborating with the GM and CEO. Must be based in UAE with right to work; experience in African or African-influenced cuisine is essential.

Qualifications

• Head Chef or strong Sous Chef in a premium, high-volume restaurant.
• Menus you have personally written and can discuss commercially, with costing.

Responsibilities

• Own the menu end to end: concept development, seasonality, dish creation, costing, specials and consistency at volume.
• Build a modern menu around African and African-influenced regional ingredients, spices and techniques.
• Develop and refresh the menu over time in response to guest feedback, seasonality and performance.
• Recruit, train, roster and retain the kitchen brigade, building a respectful culture.
• Coach and develop chefs at every level, creating a pipeline of talent and internal promotion.
• Lead pre-opening recruitment and training to ensure opening brigade understands standards.
• Lead from the pass during service, setting the tone and standard for the kitchen.
• Own kitchen commercials: food cost, gross margin, portion control, wastage, stock management and supplier negotiation.
• Deliver the kitchen contribution to the venue P&L with GM on labour and profitability targets.
• Implement disciplined systems for ordering, stock control, prep planning and kitchen scheduling.
• Build direct relationships with growers, fishermen, butchers and specialist suppliers of African produce.
• Own food safety, HACCP, hygiene and kitchen compliance with Dubai Municipality regs.
• Partner with GM and Bar Manager on guest journey, events and activations.
• Contribute to the wider group management team.
