Job summary

Accor in Dubai is seeking an experienced F&B Cost Controller to monitor and control costs across all outlets and support budgeting, forecasting, and month-end closing. You will collaborate with Finance, Purchasing, Stores, Culinary and F&B Operations teams to safeguard profitability.

The ideal candidate holds a Bachelor's degree in Accounting or Finance, 3–5 years in F&B cost control within a luxury hospitality environment, and strong Excel and inventory systems experience.

Qualifications

• Bachelor's degree in Accounting, Finance, or in a related field
• 3–5 years of F&B Cost Control experience in a 5-star hotel or luxury hospitality environment
• Strong knowledge of food & beverage costing, inventory, and purchasing controls
• Proficiency with Microsoft Excel
• Experience with financial management software and inventory systems (Futurelog, Opera)
• Analytical and problem-solving skills; detail-oriented and accurate
• Excellent organizational and time management abilities
• Effective oral and written communication; ability to work independently and collaboratively
• UAE financial regulations familiarity preferred

Responsibilities

• Monitor and control food and beverage costs across all outlets.
• Conduct regular inventory and stock counts and investigate variances.
• Prepare daily, weekly, and monthly F&B cost reports.
• Manage recipe, menu, and beverage costing and monitor theoretical vs. actual costs.
• Monitor purchasing prices, receiving, stock transfers, wastage, and stock adjustments.
• Identify cost-saving opportunities and support outlet profitability.
• Ensure compliance with F&B financial controls and hotel policies.
• Work closely with Finance, Purchasing, Stores, Culinary, and F&B Operations teams.
• Support budgeting, forecasting, month-end closing, and financial analysis.
