Job summary

Paramount Hotel Dubai is seeking a Chef de Partie-style professional to prepare soups, stocks, roasts and mise-en-place for our functions and restaurants. You will manage food requisition and stock control, assist the culinary team, and ensure daily operations run smoothly under supervision.

You will work closely with the Chef de Cuisine, Sous Chef and Junior Chef, upholding cleanliness, sanitation and guest-focused service for regular and long-staying guests.

Qualifications

• Minimum 2 years in a similar role in a 4- or 5-star hotel or upscale restaurant.
• HACCP knowledge is an advantage.
• Hotel school degree or equivalent culinary qualification.

Responsibilities

• Prepare soups, stocks, roasts and mise-en-place for functions and restaurants.
• Manage food requisition and stock control.
• Provide training and support as needed.
• Assist Chef de Cuisine, Sous Chef and Junior Chef to ensure smooth daily operations.
• Coordinate with supervisor and department heads.
• Ensure refrigerators are cleaned and workstations set for day shift.
• Oversee kitchen cleanliness, sanitation and personal hygiene of staff.
• Inform supervisor of any short deliveries or quality issues.
• Take charge of the department in the Chef de Partie's absence.
• Incorporate guest information as part of strategy to enhance service.
• Build relationships with regular and long-staying guests.

Job Purpose

• Preparation of all soups, stocks, roasts items and daily mise-en-place for functions and restaurants
• Food requisition and control of stock items
• Check on training from time to time
• Assist Chef de Cuisine, Sous Chef and Junior Chef runs smoothly the day to day operation in Kitchen
• Work closely with his supervisor department head
• Check that all the refrigerators are cleaned, set-up the work station for the day
• Check and involves steward department in general cleanliness sanitation and staff personal cleanliness and hygiene
• Ensure that all the product have been delivered and to inform his supervisor of any short delivery and also to check if any products are not the standard of quality required
• In the absence of Chef de Partie, takes over and fully in charge of the department at any time required
• Incorporate customer information as part of strategy
• Highly visible and will build relationships with regular and long staying guests

Qualifications and experience

• Minimum 2 years of experience in a similar position within a 4- or 5-star hotel or comparable restaurant, preferably with experience in a café environment.
• Hotel School degree, diploma, or equivalent culinary qualification.
• HACCP certification or knowledge is an advantage.
