Job summary

Shapoorji Pallonji & Company Pvt. Ltd. is seeking an experienced Cost Controller & Purchaser with a strong F&B background to manage food costing, inventory control, purchasing, supplier coordination, and margin analysis across our operations in Dubai.

The ideal candidate will monitor food cost, COGS, and product margins; prepare recipe costing and BOMs; review supplier pricing; and ensure accurate SAP/ERP records, timely replenishment, and cost-control reporting.

Qualifications

• Experience in F&B cost control and purchasing.
• Strong knowledge of inventory management and recipe costing.
• Understanding of BOMs and food-cost analysis.
• Proficient in purchasing procedures and supplier negotiation.
• Experience with SAP or another ERP system; strong Excel and analytical skills.

Responsibilities

• Monitor food cost, COGS, gross profit, and product margins.
• Prepare and maintain recipe costing and BOMs.
• Review purchase prices and analyze cost fluctuations.
• Conduct and supervise stock counts and investigate variances.
• Coordinate purchasing with kitchen, butchery, and operations teams.
• Source suppliers, obtain quotations, negotiate pricing, and ensure competitive terms.
• Prepare and follow up purchase orders and supplier deliveries.
• Maintain inventory and purchasing records in SAP/ERP.
• Review supplier invoices against PO, GRPOs, and agreed prices.
• Prepare cost-control reports and highlight corrective actions.

Key Responsibilities

• Monitor food cost, COGS, gross profit, and product margins.
• Prepare and maintain recipe costing and BOMs.
• Review purchase prices and analyze cost fluctuations.
• Conduct and supervise stock counts and investigate inventory variances.
• Monitor wastage, stock losses, and consumption.
• Coordinate purchasing requirements with kitchen, butchery, and operations teams.
• Source suppliers, obtain quotations, negotiate pricing, and ensure competitive purchasing terms.
• Prepare and follow up purchase orders and supplier deliveries.
• Maintain accurate inventory and purchasing records in SAP/ERP.
• Monitor stock levels and ensure timely replenishment without overstocking.
• Review supplier invoices against purchase orders, GRPOs, and agreed prices.
• Prepare cost-control reports and highlight areas requiring corrective action.

Requirements

• Previous experience in F&B cost control and purchasing is required.
• Strong knowledge of inventory management, recipe costing, BOMs, and food-cost analysis.
• Good understanding of purchasing procedures and supplier negotiation.
• Experience with SAP or another ERP system is preferred.
• Strong Excel and analytical skills.
• Detail-oriented, organized, and able to coordinate effectively with multiple departments.
• UAE F&B experience is preferred.
