Job summary

Meliá Hotels International in Dubai is seeking a Kitchen position to support daily cooking and food preparation while upholding quality and hygiene standards. You will assist and guide junior kitchen staff, coordinate production with the Chef de Partie, and ensure accurate hygiene records.

Qualifications

• Experience in hotel kitchen or large volume cooking preferred.
• Knowledge of food safety standards.
• Ability to work in a fast-paced environment.

Responsibilities

• Prepare and cook proteins, vegetables, and other food items.
• Taste food to ensure consistent quality and flavour.
• Assist and guide Kitchen Assistants with food preparation and service.
• Coordinate daily production with the Chef de Partie.
• Complete all required hygiene and food safety records.
• Store dry goods, vegetables, and other food items properly.
• Ensure all prepared food is properly covered, labelled, and stored.
• Keep section refrigerators clean, tidy, and organized.
• Follow proper stock rotation procedures.
• Ensure all cooked and processed food is date-stamped.
• Keep the kitchen section clean and tidy at all times.
• Follow all food safety, hygiene, and health and safety procedures.
