Job summary

Grand Plaza Mövenpick Media City in Dubai is seeking a detail-oriented Demi Chef de Partie (Cold Kitchen) to join our culinary team. You will work under the Chef de Partie to prepare cold dishes, salads, and charcuterie, while maintaining station cleanliness and ensuring food safety standards.

Under the Chef de Partie, you will manage inventory, assist in menu development, train junior staff, and collaborate with colleagues to deliver high-quality plated dishes for our guests.

Qualifications

• Proven experience in a professional cold kitchen or garde manger.
• Strong knowledge of cold food preparation techniques incl. salads, charcuterie, and appetizers.
• Excellent knife skills and proficiency with kitchen tools.
• Solid understanding of food safety, sanitation, and hygiene standards.

Responsibilities

• Prepare cold dishes, salads, appetizers, and charcuterie items per recipes and plating standards.
• Maintain and organize your cold kitchen station and ensure tools/ingredients are stored properly.
• Execute precise knife cuts and prep techniques for consistent quality.
• Monitor food quality, temperature, and freshness; discard items not meeting standards.
• Assist in menu development and seasonal specials for cold kitchen offerings.
• Collaborate with kitchen team to ensure smooth workflow and timely service.
• Follow all food safety, sanitation, and hygiene regulations.
