Job summary

Mandarin Oriental Jumeira, Dubai is seeking a Chef De Partie for The Bay Kitchen to deliver exceptional Italian and Mediterranean dishes in a high-volume, luxury setting. You will lead a kitchen station, ensure quality and consistency, and work closely with the Chef de Cuisine to train staff and uphold MOHG standards.

Qualifications

• Experience as Chef de Partie in a high-volume restaurant with Italian/Mediterranean cuisine.
• Minimum 3 years’ experience in a 5-star hotel or fine dining environment.
• International work experience in multiple regions (Asia, Europe, North America, Middle East).
• Solid knowledge of preparing, cooking, and presenting dishes.
• Strong knowledge of HACCP.

Responsibilities

• Take full responsibility for the quality and presentation of the restaurant’s dishes.
• Supervise kitchen section and coordinate with other sections.
• Ensure food safety, hygiene, and stock management standards are met.
• Monitor plating guides and ensure correct dish descriptions and images are followed.
• Oversee ordering and inventory of ingredients on a daily basis.
• Support Chef de Cuisine with training and development of the team.
