Job summary

Emirates Palace Mandarin Oriental, Abu Dhabi is seeking a Captain to join our Food & Beverage – Sand & Koala team in Abu Dhabi. You will supervise service, support reservations for events, ensure flawless table settings, and train junior staff as part of a luxury dining experience.

The role requires strong communication and customer service, with preferred experience in luxury hotels. Russian language is a plus, in a leading 5-star property with exceptional standards.

Qualifications

• Previous experience in the same role in a luxury hotel is preferred.
• Strong communication and customer service skills.
• Senior School qualification or equivalent will be an advantage.
• Proficiency in the Russian language will be considered an added value.

Responsibilities

• Coordinate and supervise all duties for opening and closing brigade.
• Assist the assistant manager in planning according to reservations and special events.
• Check condition, cleanliness and proper functioning of all operating equipment and furniture.
• Assist in the training of waiter/waitress and junior waiters.
• Ensure the correct and complete set-up of the restaurant section assigned to him/her.
• Welcome guests in his/her station and assist in seating.
• Present menus and beverage lists to the guest with recommendations designed to increase average check.
• Take food and beverage orders and to ensure speedy service of all food and beverage items.
• Ensure that each table is correctly set up as per food and beverage order requirements.
• Participate in service of food and beverage items especially during rush hours.
• Check and follow-up on billing and checking procedures as per policies set by emirates palace.
• Ensure proper cash handling procedures are followed as per policies set by emirates palace.
• Be present in the restaurant during service hours.
• Ensure that tables are cleaned and reset immediately after the guests have left, in line with the standards set by emirates palace.
• To develop and maintain good relations with guests and to handle guest complaints as required by the restaurant manager or his assistant.
• Ensure that the restaurant manager and assistant restaurant manager are kept informed of all guest comments and complaints.
