Responsibilities

• Lead the Stewarding Department with courteous, professional service.
• Assign responsibilities to Supervisors and Team Members.
• Maintain a hands-on presence during busy periods to ensure standards.
• Control breakages, waste, and losses; provide feedback and take corrective measures.
• Adhere to operating budgets and payroll controls; utilize part-time staff effectively.
• Build a pool of qualified Team Members in coordination with Executive Chef, HR and Purchasing.
• Contribute to annual budget planning for costs, equipment and FF&E.
• Lead, train and demonstrate duties to ensure alignment with Waldorf Astoria & Forbes standards.
• Implement flexible schedules and rosters based on business patterns.
• Maintain inventories, par stocks and proper storage of equipment and supplies.
• Coordinate repairs and maintenance for proper operation.
• Supervise use of stewarding chemicals and safety guidelines.
• Identify training needs and evaluate performance of team members.
• Monitor food cost through wastage minimisation and accurate requisitioning.
• Support ESG initiatives and HACCP compliance.
