Placements24 is seeking a Head of Operations for a prestigious vineyard and wine producer in Paarl, Western Cape. You will oversee winemaking and vineyard operations, driving quality from grape to bottle while leading a talented production team.

The ideal candidate has 8+ years in wine production management, deep viticulture and oenology knowledge, and proven leadership. On-site role with attractive salary, bonuses, health benefits, and housing support.

Qualifications

• Minimum 8 years in wine production management.
• Significant vineyard and winemaking experience.
• Knowledge of viticulture, oenology, fermentation, and aging.
• Experience with HACCP and quality management systems.
• On-site work in Paarl; willingness to be based on site.

Responsibilities

• Manage wine production processes including vineyard, harvesting, fermentation, aging, bottling, and packaging.
• Oversee operational efficiency and quality control across winemaking lifecycle.
• Develop strategies to improve yield, quality and cost-effectiveness while maintaining premium standards.
• Lead and mentor winemakers, vineyard managers, cellar hands and production staff.
• Ensure compliance with agricultural, food safety and environmental regulations for wine.
• Oversee vineyard operations including planting, irrigation, and canopy management.
• Manage winery equipment maintenance and facility upkeep.
• Oversee operational budgets and identify cost-saving opportunities.
• Collaborate with sales, marketing and export teams to align production with market demand.
