Job summary

Mahzen, part of The Xara Collection, is a welcoming spot in the heart of Mdina offering traditional Maltese food, drinks, ice cream and local products, giving both locals and visitors a taste of Maltese culture.

We are looking for an experienced Artisan Baker to join the team and take an active role in the daily production of viennoiserie, including croissants, Danish pastries and pain au chocolat, while ensuring consistent quality, taste and presentation.

Qualifications

• Previous experience as a baker or in a professional bakery.
• Good knowledge of bread production and fermentation.
• Experience with glossy dough and viennoiserie.
• Good attention to detail and consistency.
• Ability to work well in a fast-paced environment.
• Bakery or pastry qualification is considered an advantage.
• Valid Food Handler Licence in accordance with Maltese regulations.
• Good command of English.

Responsibilities

• Produce croissants, Danish pastries, pain au chocolat and other viennoiserie.
• Prepare, shape, gloss, proof and bake dough.
• Monitor fermentation and baking quality.
• Ensure consistent taste, texture and presentation.
• Maintain high hygiene and food safety standards.
