Job summary

Crew Life at Sea Ltd. seeks a skilled Sous Chef, with a focus on fish preparation, to join our onboard culinary team on a cruise ship.

You will assist the Executive Chef, plan menus, train junior staff, ensure proper fish handling, and uphold strict sanitation standards in a fast-paced, ever-changing sailing environment.

Qualifications

• Minimum 3 years as a Sous Chef focusing on fish
• Culinary degree or equivalent experience
• Strong knowledge of fish species and prep methods
• Proven ability to train kitchen staff
• Excellent time management and organization
• Ability to work in fast-paced environment
• Strong communication and interpersonal skills
• Flexible to long hours and changing schedules

Responsibilities

• Assist Executive Chef in managing fish prep/production onboard the ship
• Ensure fish is cleaned, cut, and prepared to recipes and standards
• Plan menus and order supplies in coordination with Executive Chef
• Train and supervise junior kitchen staff in fish prep techniques
• Maintain clean, organized work area and proper labeling of products
• Adhere to safety and sanitation guidelines for a safe kitchen
• Assist in other kitchen areas as needed
• Participate in onboard events and activities
• Monitor and maintain inventory of fish and seafood products

Job description

Key Responsibilities:

• Assist the Executive Chef in managing the fish preparation and production for the entire ship
• Ensure all fish is properly cleaned, cut, and prepared according to recipes and standards
• Work closely with the Executive Chef to plan menus and order necessary supplies
• Train and supervise junior kitchen staff in proper fish preparation techniques
• Maintain a clean and organized work area, including proper storage and labeling of all food products
• Adhere to all safety and sanitation guidelines to ensure a safe and healthy work environment
• Assist in other areas of the kitchen as needed, including food preparation, cooking, and plating
• Participate in on-board events and activities as required
• Monitor and maintain inventory of fish and seafood products On Board Cruise Ship

Requirements:
