Placements24 is seeking an experienced Commercial Kitchen Sanitation Manager for a flagship restaurant in Centurion, Gauteng. You will lead hygiene operations, develop sanitation protocols, and manage a team ensuring adherence to high food-safety standards.

Role requires strong leadership, hands-on approach, and meticulous attention to detail. You will collaborate with the Head Chef and management to maintain an impeccably clean, safe kitchen and ensure ongoing staff training and audits.

Formación

• Must have proven experience as Kitchen/Sanitation Manager in high-volume kitchens.
• Solid knowledge of food safety standards: HACCP and local health regulations.
• Proficient with cleaning agents, sanitation equipment, and kitchen sanitation methods.
• Strong leadership, training, and supervisory abilities.
• Excellent organizational and time-management skills.
• Meticulous attention to detail and high standards.
• Effective communication and interpersonal skills.
• Ability to work under pressure in fast-paced settings.
• ServSafe or equivalent certification is highly desirable.
• Reliability, punctuality, and a strong sense of responsibility.

Responsabilidades

• Develop, implement, and enforce kitchen sanitation and food safety procedures.
• Ensure compliance with local health codes, regulations, and company policies.
• Supervise and train kitchen cleaning staff; assign daily tasks and monitor execution.
• Inspect kitchen areas, storage, cooking, and dishwashing stations for cleanliness.
• Manage inventory of cleaning supplies, chemicals, and equipment; ensure proper storage.
• Oversee use and maintenance of kitchen cleaning equipment.
• Investigate sanitation issues or non-compliance promptly.
• Maintain records of cleaning schedules, inspections, training, and inventory.
• Collaborate with Head Chef and management to integrate sanitation into operations.
• Promote hygiene and safety culture among kitchen staff.
• Stay updated on best practices and new regulations in food safety.
