Bushwise invites a Senior Chef de Partie to join its award-winning culinary team in Mossel Bay, South Africa. You will lead a kitchen section, craft upscale dishes per reserve recipes, and ensure world-class presentation in a 5-star bush setting.

Ideal candidates have 3–5 years in luxury lodges and hold a professional culinary certificate. The role requires leadership, adaptability to remote work, and a passion for safari-style dining experiences.

Qualifications

• A recognized professional culinary certificate or diploma.
• 3–5 years of professional kitchen experience, with at least 2 years in a 4 or 5-star luxury lodge, boutique hotel, or premium fine-dining environment.
• Strong plating aesthetics and absolute precision under high-pressure service periods.
• Willingness to live and work in a remote wilderness environment with a flexible hospitality roster.

Responsibilities

• Take full operational ownership of your assigned kitchen section (Hot, Cold, Pastry, or Pass).
• Plan and execute mise-en-place and upscale dishes according to reserve recipes and 5-star presentation standards.
• Prepare safari-style dining, including luxury interactive boma dinners and open-fire cooking.
• Accommodate dietary requirements, allergies, and special culinary requests on short notice.
• Supervise, train, and guide junior kitchen staff to maintain a cohesive kitchen brigade.
• Enforce food safety, FIFO, cost control, and HACCP standards.
