Job summary

Bushwise in Vaalwater, South Africa, seeks a passionate Head Chef to lead its kitchen in a luxury safari lodge. You will design seasonal menus, oversee a small kitchen team, and deliver fine dining as well as bush dinners.

This hands-on role requires strong food costing, inventory management, and strict hygiene. Live-in accommodation is provided, and you will work in a remote, malaria-free reserve, catering to local and international guests with impeccable service.

Qualifications

• Minimum 2–3 years at Head Chef level in luxury lodges or fine dining.
• A formal culinary qualification or diploma is highly preferred.
• Strong knowledge of food costing, inventory control, and kitchen administration.
• Adaptable and organized for remote bush environments.
• South African Driver’s Licence is essential.

Responsibilities

• Design, implement, and execute seasonal menus for luxury safari dining.
• Lead daily kitchen operations, ensure top-quality food and plating.
• Manage food costing, portions, and weekly stock orders to reduce waste.
• Mentor and train kitchen staff; maintain team morale.
• Conduct stocktakes and manage supplier relationships.
• Maintain hygiene and safety standards across prep and storage.
• Cater to dietary/religious requirements; interact with guests when needed.
