Bright Search Recruitment (Pty) Ltd is seeking a seasoned Sous Chef for a large luxury lodge or similar high-end hospitality operation in South Africa. The role requires leadership of a sizeable kitchen brigade and continuous delivery of exceptional dining experiences for international guests.

The ideal candidate has substantial luxury lodge experience and is confident leading the kitchen while supporting the Executive Chef. Fluent French is highly advantageous.

Qualifikationen

• Culinary qualification from a recognised culinary institution.
• Minimum 35 years' experience in a professional kitchen environment.
• Proven experience as a Sous Chef in luxury lodges or high-end hospitality.
• Experience managing a sizeable kitchen brigade and high-volume service.
• Knowledge of modern culinary techniques, food prep and presentation.
• KPI focus: cost control, stock management and kitchen administration.
• HACCP, food safety and hygiene standards knowledge.
• Experience catering for international guests and diverse dietary needs.
• French-speaking candidates preferred; fluency advantageous.

Aufgaben

• Support Executive Chef across all kitchen operations.
• Lead and supervise a large kitchen brigade during service periods.
• Plan menus and develop recipes for luxury lodge dining experiences.
• Ensure high quality, presentation and consistency during peak times.
• Maintain food costing, stock control and kitchen administration.
• Uphold HACCP and hygiene standards across the kitchen.
