Job summary

HotelJobs in Franschhoek is seeking a dynamic restaurant supervisor to lead a luxury dining team. You will ensure top-tier service, oversee shifts, coordinate with the Head Chef and Hotel Manager, and help shape seasonal menus and events.

The role requires at least 3 years in a supervisory role within a fine dining or 5-star hotel setting, strong knowledge of service standards, and proficiency with restaurant POS systems. Matric is required; wine certification is a plus.

Qualifications

• Minimum 3 years of supervisory experience in fine dining or a 5-star hotel.
• Excellent knowledge of food and beverage service standards.
• Proficiency in restaurant POS systems.

Responsibilities

• Review the day sheet at shift start and brief servers on guest movements and dietary requirements.
• Ensure opening/closing procedures are followed and daily shift tasks completed.
• Prepare and supervise mise-en-place for each meal period, including room service orders.
• Greet and assist guests according to service standards.
• Manage table allocations for guest satisfaction and balance across stations.
• Coordinate with Head Chef and Hotel Manager on menus, wine lists and daily operations.
• Attend meetings and training courses as required.
• Monitor staff performance and ensure compliance with standards and protocols.
• Identify training needs and support staff development.
• Conduct disciplinary discussions with underperforming staff with HR support.
• Oversee stock counts and submit to stores timely.
• Monitor punctuality/absences and update PRP/ESS records.
• Ensure shifts are adequately staffed and assist with scheduling.
• Operate POS systems and manage end-of-day procedures and settlements.
• Report monthly budgets during MIS meetings and address finance queries.
• Contribute ideas for seasonal menus, events and occasions.
• Conduct pre/post inspections of venues and group bookings.
