Job summary

Red Ember Recruitment is seeking a Restaurant Manager to join a client team based in Franschhoek, Western Cape. The role supervises the Restaurant team to achieve the restaurant's strategic direction and annual plans for the F&B service.

The successful candidate will oversee day-to-day operations, coordinate with Head Chef/Hotel Manager, manage stock and schedules, and drive guest satisfaction in a fine dining environment. Franschhoek experience preferred and strong leadership is essential.

Qualifications

• 3 years experience in a supervisory role within a fine dining or 5-star hotel restaurant or hospitality environment.
• Proficiency in using restaurant POS systems.
• Excellent knowledge of food and beverage service standards.

Responsibilities

• Review day sheets and brief servers on guest movements and dietary requirements.
• Ensure opening and closing procedures are followed and daily shift procedures completed.
• Prepare and supervise mise-en-place for each meal period including room service orders.
• Greet and assist guests according to Client standards.
• Manage table allocations and ensure guest satisfaction.
• Coordinate with Head Chef/Hotel Manager for wine list, menu, and daily operations feedback.
• Attend meetings and training courses.
• Monitor restaurant staff performance and standards.
• Support staff development and provide retraining as needed.
• Conduct disciplinary discussions with underperforming staff with HR involvement.
• Take charge of stock counts and submit to stores on time.
• Monitor attendance and keep PRP/ ESS systems up to date.
• Ensure shifts are adequately staffed and scheduling is smooth.
• Proficient in end-of-day POS procedures and cash handling.
• Report monthly expenditure during MIS meetings and address finance queries.
• Brainstorm ideas for seasonal menus, events, and occasions.
• Do pre- and post-inspections of venues and setups.
• Coordinate group arrangements and distribute internal function sheets.
