Hoseki Kitchen at Delaire Graff Estate is seeking a professional Chef De Partie to delight guests with dishes crafted to the chef’s recipes and specifications. The role focuses on maintaining quality, HACCP compliance, and efficient kitchen operations in a fine-dining setting.

You will work under the guidance of the Executive Chef or Sous Chef, contribute new ideas for dishes, and collaborate with a distinguished clientele in a high-end estate environment in Stellenbosch.

Qualificações

• Chef Certificate/Diploma is required.
• Own transport with a valid driver’s licence or reliable transport.
• 2–3 years’ previous experience as a Chef de Partie.
• Excellent communication skills.
• Ability to work effectively as part of a team.
• Ability to maintain professional working relationships across all departments, cultures and religions.
• Comfortable dealing with very distinguished clientele.
• Punctual, self-disciplined and attentive to detail.

Responsabilidades

• Maintain stock control within area of responsibility and ensure health, hygiene and safety compliance.
• Control quality, quantity and cost of all dishes prepared.
• Communicate ingredient requirements to the Sous Chef and manage par stock levels; check deliveries.
• Ensure proper HACCP-compliant handling and storage of food.
• Prepare mise-en-place fresh and on time.
• Ensure dishes are portioned, garnished and presented per standards.
• Follow guidance of Executive/Sous Chef; contribute ideas for new dishes.
• Continuously improve cooking processes for quality and efficiency.
• Promote a positive, cooperative and professional working environment.
