Placements24 invites a creative and senior Executive Pastry Chef to lead pastry and dessert production across fine dining, banqueting, and in-room dining in Cape Town. You will design menus, mentor a pastry team, and ensure flawless presentation while upholding the highest hygiene standards.

The role requires at least seven years in pastry, including three in a senior role, plus a culinary degree in Pastry Arts.

Qualifications

Proven expertise in classical and contemporary pastry techniques.
Experience leading a pastry team in a luxury or high-end setting.
Strong knowledge of cost control, inventory, and procurement.

Responsibilities

Conceptualize, develop, and execute a pastry and dessert menu for multiple outlets.
Oversee daily pastry operations, planning, inventory, and cost control.
Lead, train, and mentor the pastry team to maintain high standards.
Maintain hygiene and safety standards per health regulations.
Collaborate with culinary leaders to integrate pastry offerings across venues.
Manage procurement and ensure quality and freshness of ingredients.
Control food costs and optimize resources without compromising quality.
