Job summary

wine.co.za is seeking a hands-on cellar assistant to support the Winemaker across harvest, production and administration. You will help coordinate harvest, monitor fermentations, assist with blending and bottling, and maintain precise production records with a focus on quality and compliance.

The role requires practical winery experience, regulatory knowledge, and the ability to lead and train cellar staff. A driver’s licence and willingness to work long harvest hours are essential.

Qualifications

  • Tertiary qualification in Viticulture & Oenology or equivalent.
  • Minimum two years' practical winemaking experience, including internships and international harvest experience.
  • Proven experience in a commercial winery environment.
  • Knowledge of SAWIS, IPW and other industry regulations.
  • Valid driver’s licence.
  • Experience in wine-production administration and recordkeeping.

Responsibilities

  • Harvest planning, scheduling and coordination.
  • Assist with all cellar operations and winemaking processes.
  • Blending, stabilisation and bottling coordination.
  • Maintain accurate production records and documentation.
  • Oversee cellar hygiene and quality-control procedures.
  • Coordinate and supervise cellar staff and allocate tasks.
  • Procurement of wine-production consumables and stock control.
