Deer Valley Resort is seeking a Chef de Cuisine for Royal Street Café in Park City, UT. The role oversees production, directs kitchen staff, and delivers premier-quality dishes with strong cost control and guest service focus.

The candidate will manage a high-volume operation, maintain consistency in taste and presentation, and collaborate with the executive team to ensure profitability and a positive guest experience.

Qualifications

• Ten years of kitchen experience in a high-quality, high-volume operation serving 500 guests or more.

Responsibilities

• Stay knowledgeable of current food trends and develop new, creative menu items each season.
• Operate the kitchen and direct kitchen personnel, including Sous Chefs, Cooks, and Stewards.
• Maintain consistency of product with great attention to food quality, taste, and presentation.
• Control food costs based on forecasting, and ensure proper purchasing procedures.
• Control labor costs and manage payroll, scheduling, recruiting, and training.
• Direct proper purchasing procedures and specifications with storeroom management.
• Maintain safe and sanitary working conditions in accordance with health codes.
• Ensure high standards of dress, hygiene, and safety for all staff.
• Collaborate with fellow chefs to maintain quality across lodges.
• Other duties as assigned
