Job summary

JAPANMART, an authentic Japanese style convenience store in Arcadia, CA, seeks a Sushi/Kitchen Team Lead to support daily operations for cooked foods and sushi. You will supervise and assist with food prep, ensure quality and safety, and help manage inventory in a fast-paced environment.

The role requires strong leadership, 2+ years of supervisory experience, sushi preparation skills, and English fluency. Competitive hourly pay, full-time schedule (36–40 hrs/week), and benefits are provided.

Qualifications

• Minimum of 2+ years of supervisory experience in food and beverage operations and/or retail environments.
• Sushi preparation experience required.
• Basic understanding of MS Office and ability to learn new systems quickly.
• Basic understanding of reading and analyzing P&L reports.
• Trained to operate cash registers accurately and efficiently.
• Strong communication and teamwork skills.
• Friendly, positive attitude and strong work ethic.
• Ability to stand for periods of time in a fast-paced setting.
• Strong attention to detail, cleanliness, and food quality.
• Reliable, punctual, and able to work well in a team.
• Bilingual English/Japanese preferred but not required.
• Fluency in spoken and written English.
• Must be legally authorized to work in the United States.

Responsibilities

• Assist with sushi preparation and food assembly under JAPANMART quality standards.
• Follow instructions and guidance provided by the Executive Chef.
• Assist with analyzing and working on Profit & Loss (P&L) reports.
• Prepare ingredients, including portioning and cutting raw fish per recipes and quality standards.
• Prepare all cooked items (onigiri, soufflé pancakes, unagi bowls, etc.) with consistent quality.
• Monitor cooking times, food quality, and adherence to brand standards.
• Follow all food safety and sanitation requirements and health department rules.
• Operate kitchen equipment safely and properly.
• Assist with packaging, labeling, restocking, and inventory checks.
• Maintain cleanliness and organization of workstations and storage areas.
• Assist with opening and closing kitchen procedures.
• Maintain speed and efficiency during peak hours.
• Collaborate with JAPANMART team members to ensure smooth operations.
• Communicate effectively during busy periods and support teammates.
• Provide friendly, professional customer service.
• Perform additional duties to support daily operations.
