Job summary

JAPANMART in Arcadia, CA is seeking an experienced Chief Sushi Chef to lead its sushi and kitchen sections. You will supervise daily prep, ensure authentic quality, and partner with store management and JP partners to uphold brand integrity.

Responsibilities include menu development, staff hiring/training, and overseeing cost controls while maintaining high standards of food safety and customer satisfaction. This full-time role offers opportunities to shape pre-opening operations.

Qualifications

• Minimum 5 years of professional sushi chef experience, including 2+ years in a leadership role.
• Grocery store sushi section experience preferred.
• Expert-level knowledge of traditional Japanese sushi techniques and knife skills.
• Basic understanding of financial concepts, including reading P&L reports.
• Knowledge of inventory control practices and PAR systems.

Responsibilities

• Oversee all JAPANMART sushi and kitchen daily operations, ensuring quality, speed, and consistency.
• Maintain highest standards for quality, freshness, presentation, and flavor per brand guidelines.
• Hire, train, schedule, and supervise sushi and kitchen staff; develop team skills and discipline.
• Lead pre-opening kitchen setup, vendor selection, staffing, and cross-department coordination.
• Design/menu development, pricing strategies, and cost analysis to ensure profitability.
• Assist with P&L discussions and provide insights for decision-making.
• Ensure HACCP compliance and food safety procedures across all outlets.
• Manage inventory, minimize waste, and coordinate with vendors for timely ordering.
