WHAT WE LOOK FOR IN A SUSHI COOK
  • Experience making sushi in a high-volume and fast-paced environment.
  • Strong knife skills and knowledge of Japanese cutting and preparation techniques.
  • Ability to identify high-quality fish and maintain freshness standards.
  • Attention to detail and commitment to sushi presentation.
  • Understanding of food safety, hygiene, and cross-contamination practices.
  • Flexible availability to work mornings, late nights, weekends, holidays, and weekdays as needed.
WHAT YOU WILL DO AS A SUSHI COOK
  • Prepare high-quality sushi and sashimi with precision and consistency, including nigiri, maki, and specialty rolls.
  • Maintain proper handling and storage of raw fish and other perishable ingredients to ensure food safety and freshness.
  • Set up and stock sushi bar with all necessary supplies, knives, and tools prior to service.
  • Collaborate with chefs and kitchen staff to execute menu items and specials according to recipe and plating standards.
  • Uphold cleanliness, organization, and sanitation of the sushi station in accordance The Hamilton’s high standards for food safety and quality.
