JRDN Restaurant at Tower23 Hotel in San Diego is seeking skilled Sushi Cooks to join our kitchen team. If you love working with fresh ingredients, thrive in a fast-paced environment, and care about plating as much as flavor, we’d love to meet you.

Bring at least 2 years of kitchen experience, a valid San Diego Food Handler’s Card, and a team-first attitude. You’ll prep, assemble, and present high-quality sushi, seafood, and vegetables while maintaining cleanliness and consistent standards.

• Experience in a kitchen or sushi prep line (2+ years)
• Ability to work in a busy team environment
• Strong communication with teammates
• Ability to stand for long periods and lift up to 40 lbs

Responsibilities

• Prepare a variety of high-quality seafood, vegetables, and sushi items with precision and speed
• Execute sushi preparation methods with consistency
• Portion, season, marinate, and prepare ingredients according to JRDN recipes and plating standards
• Maintain cleanliness and sanitation at your station and throughout the kitchen and sushi station
• Restock line stations and prep ingredients to ensure smooth service
• Follow closing and prep checklists accurately and assist in kitchen shutdown
• Work as a team to ensure timing, consistency, and exceptional presentation

Known for our casually sophisticated steak and seafood menu, stunning ocean views, and sleek California vibes, we serve lunch, dinner, and weekend brunch—where every visit feels like a mini vacation.

We’re currently seeking Sushi Cooks with a passion for their craft to join our kitchen team. If you love working with fresh ingredients, thrive in a fast-paced environment, and care about plating as much as flavor—we want to meet you.

What You’ll Do:

• Prepare a variety of high-quality seafood, vegetables, and sushi menu items with precision and speed
• Execute sushi preparation methods with consistency
• Portion, season, marinate, and prepare ingredients according to JRDN recipes and plating standards
• Maintain cleanliness and sanitation at your station and throughout the kitchen and sushi station

What We’re Looking For:

• Experience: Minimum 2 years in a kitchen or sushi prep line (upscale, high-volume preferred)
• Certifications: Valid San Diego Food Handler’s Card (or willingness to obtain one after hire with company support)
• Communication: Be a clear, respectful communicator in a busy team environment
• Endurance: Able to stand for long periods and lift and carry up to 40 lbs
• Skillset: Ability to follow printed recipes, plate specifications, and safety protocols
• Professionalism: Clean, organized, and compliant with Health Department hygiene standards
• Availability: Must be able to work weekends and holidays
