Responsibilities include, but are not limited to:

  • Preparing all food items following standard recipes and procedures within specified time limits.
  • Prepping assigned items according to the Prep Lists and par levels set by the Head Sushi Chef.
  • Measuring and assembling ingredients properly; cutting and portioning meats and fish consistently.
  • Storing and handling raw or prepared foods and supplies properly.
  • Cleaning and sanitizing equipment, surfaces, and the kitchen according to schedules and procedures.
  • Maintaining a safe and sanitary workstation.
  • Handling food in accordance with local health guidelines.
  • Following food handling techniques to minimize waste and expense.
  • Maintaining personal hygiene standards.
  • Adhering to safety regulations and reporting unsafe conditions.
  • Participating in training sessions as assigned.
  • Following uniform, grooming, safety, and sanitation rules.
Knowledge and Skills
  • Minimum 1 year of high-volume sushi restaurant experience.
  • Ability to read and understand English.
  • ServSafe certification is a plus.
  • Basic math skills for measurements.
  • Ability to follow written and oral instructions.
  • Excellent interpersonal and communication skills.
  • Good auditory and visual skills.
  • Knowledge of company food and beverage standards.
  • Organizational skills and multi-tasking ability.
