Trapper's Sushi in Bonney Lake, WA is seeking a dependable Sushi Chef to join a fast-paced, team-oriented kitchen. You will craft sushi and Japanese-inspired dishes, manage prep and inventory, and uphold food safety while delivering a memorable guest experience.

The role emphasizes precision, creativity, and quality, with opportunities to lead, train new staff, and grow within the restaurant group. Evening and weekend shifts required.

Qualifications

• 1-3 years of professional sushi preparation preferred.
• Experience making rolls, nigiri, sashimi and specialty dishes.
• Strong knife skills and sushi techniques.
• Solid knowledge of food safety, sanitation, cross-contamination prevention and FIFO.
• Ability to work efficiently in a fast-paced, high-volume environment.
• Detail-oriented with quality presentation.
• Friendly guest service in a dining setting.
• Flexible schedule including evenings and weekends.
• MUST obtain WA Food Worker Card within 14 days of start.

Responsibilities

• Prepare sushi rolls, nigiri, sashimi and specialty dishes per recipes.
• Store, label and rotate ingredients following FIFO.
• Maintain a clean, organized workstation and uphold sanitation standards.
• Provide exceptional guest interactions at the sushi bar.
• Collaborate with kitchen and front-of-house teams for smooth service.
• Monitor inventory, restock supplies, and assist with prep as needed.
