You will manage mise en place, understand fish quality, and work with BOH/FOH to ensure a seamless dining experience. This role requires standing for long periods, lifting up to 50 lbs, and availability nights, weekends, and holidays.

Qualifications

• Experience as Sushi Chef in a high-volume restaurant.
• Expertise in sushi preparation and knife skills.
• Ability to multi-task in a fast-paced setting.
• Knowledge of sushi-grade fish handling and storage.

Responsibilities

• Prepare sushi, sashimi, and maki to Kona Grill’s high standards.
• Maintain fish quality, cutting techniques, and presentation.
• Ensure knife cuts, portions, and plating consistency.
• Follow HACCP guidelines for raw fish safety.
• Mise en place: ingredients, rice, sauces.
• Maintain a clean sushi station for high-volume service.
• Monitor seafood and produce inventory for freshness.
• Collaborate with BOH and FOH for a seamless dining experience.
• Engage with guests with sushi recommendations and interactions.
• Support chefs and kitchen leadership with enthusiasm.
