WE LOVE OUR WORK.

  • Supervises and coordinates activities of cooks and related staff in preparing and presenting menu items according to standard recipes. Maintains a clean and safe work environment by ensuring all equipment and supplies are in keeping with the standards and expectations of Hollywood Casino at Penn National Race Course in order to assist in reaching profitability, guest satisfaction, work force strength and compliance goals. Provides encouragement, sets high expectations, and sets proud and positive examples necessary to ensure a fun, exciting and professional working environment for our staff and a pleasant and entertaining experience for our guests.
    • Ability to follow all recipes and control procedures.
    • Responsible for maintaining consistent attendance and performance records.
    • Maintain food cost within budgeted parameters.
    • Control portion size, minimize waste, and present menu items according to specifications.
    • Maintain a clean and sanitary area at all times in full accordance with ServSafe guidelines and Pennsylvania state regulations.
    • Prepare weekly schedules and control labor costs.
    • Educate, train, and manage Cooks to follow policies and standards.
    • Maintain positive guest relations.
    • Communicate with other culinary supervisors and managers to ensure efficient service and properly prepared food.
    • Perform all culinary job functions within immediate area when necessary.

    • High School Diploma/GED; Associate’s/Technical Degree in Culinary Arts preferred; 3-5 years of experience; or equivalent combination of education and experience.
    • Knowledge of menu planning, soups, sauces, meat, poultry, and seafood items is required.
    • Knowledge of Food & Labor costs.
    • Must have the ability to respond to common inquiries or complaints from guests.
    • Must have the ability to perform basic math skills
    • Must have the ability to identify problems, collect data, analyze, and draw valid conclusions. - Basic computer knowledge; ability to operate POS systems.
