Job description

Responsible for all preparation of required baked goods, desserts, and confections, ensuring they are prepared in accordance with property specifications and standards, while providing supervision to all pastry employees.

ESSENTIAL DUTIES AND RESPONSIBILITIES include the following:

  1. Provide supervision to pastry shop operations.
  2. Administer production schedules and determine workflow for all pastry shop production employees.
  3. Ensure all recipes and food apportionments meet specifications.
  4. Maintain excellent kitchen hygiene conditions at all times.
  5. Assist with hiring, terminating, suspending, and counseling in coordination with the Executive Pastry Chef or Director of Culinary Operations.
  6. Possess knowledge of all state health department regulations and ensure compliance.
  7. Monitor sanitation practices to ensure employee adherence to standards and regulations.
  8. Inspect supplies, equipment, and work areas for conformance to standards.
  9. Estimate amounts and costs of supplies needed, such as food and ingredients.
  10. Coordinate and assist in the preparation, portioning, and garnishing of baked goods, desserts, and confections.
  11. Order or requisition food and supplies to ensure efficient operation.
  12. Ensure smooth and efficient daily operations.
  13. Provide training and coaching to pastry shop employees as needed, in accordance with policies and procedures.

QUALIFICATION REQUIREMENTS:

EDUCATION and/or EXPERIENCE:

High school diploma or G.E.D. preferred, with two to four years of baking experience. ACF apprenticeship or accredited culinary program is preferred.

SPECIAL QUALIFICATIONS:

Appropriate licenses as required. ServSafe certification or ability to obtain it is required. Knowledge of HACCP standards is required. Strong attention to detail skills are necessary.

This position requires a Level 4 Gaming License.

LANGUAGE SKILLS:

Ability to read, analyze, and interpret documents such as policies, procedures, and maintenance instructions. Effective communication skills for responding to inquiries from employees or guests, both one-on-one and in small groups.

MATHEMATICAL SKILLS:

Ability to perform basic math operations—adding, subtracting, multiplying, and dividing—in all units of measure, using whole numbers, fractions, and decimals.

REASONING ABILITY:

Ability to apply common sense reasoning to various situations.

PHYSICAL DEMANDS:

Regularly required to stand, walk, use hands, reach, and communicate verbally and non-verbally. Must frequently lift/move up to 25 pounds. Visual abilities required include close, distance, color, peripheral, depth perception, and focus adjustment.

WORK ENVIRONMENT:

Typically involves working near moving mechanical parts with a loud environment; casino setting may be smoky. Reasonable accommodations can be made for disabilities.
