Job summary

Thomas Cuisine is seeking a skilled Sous Chef to lead our culinary team in a senior living environment in Dallas. You will supervise daily kitchen operations, ensure quality and dietary compliance, and guide staff to deliver compassionate, scratch-made meals.

We value hands-on leadership, hospitality, teamwork, and a focus on resident well-being. The role requires a culinary background, strong food-safety knowledge, and the ability to work flexible hours including weekends and holidays.

Qualifications

  • Culinary degree or equivalent experience (preferred).
  • Minimum three (3) years of experience in a professional kitchen with supervisory responsibilities, preferably in a hospital or high-volume setting.
  • Scratch-based cooking expertise.
  • Strong knowledge of food safety, sanitation, and dietary requirements.
  • Excellent communication and leadership skills.
  • Compassionate and respectful attitude toward older adults.
  • Proficient computer skills, including Microsoft Office applications, email, and internet usage.
  • Ability to work flexible hours, including weekends and holidays as needed.
  • ServSafe® Certification and State Food Handlers Card.
  • Ability to successfully pass a criminal background check (State and Federal) and drug screen.

Responsibilities

  • Ensure client and customer satisfaction through impeccable food production.
  • Communicate effectively at various levels, including management, clients, customers, and associates.
  • Follow directives from the Executive Chef or FSD.
  • Step into leadership responsibilities in the Executive Chef/FSD's absence.
  • Train and mentor team members to promote a positive and efficient work environment.
  • Maintain strict adherence to recipes for all food production and products.
  • Conduct accurate inventory counts in all food storage areas, practicing FIFO in assigned areas.
  • Produce menu items according to timeline requirements.
  • Uphold all HACCP standard operating procedures.
  • Label all prepared items with essential information, including item details, prep date, use-by date, and the preparer's initials.
  • Execute various cooking and preparation methods on proteins, vegetables, starches, and other ingredients within the prescribed timeframe to meet all service times for the café.
  • Maintain all standard operating procedures.
  • Ensure a clean and sanitary workstation/area by practicing the clean-as-you-go method.
  • Other duties as assigned.

Job Summary

Physical and Sensory Requirements
  • This job involves regular exposure to moving mechanical parts and a kitchen environment with fumes, airborne particles, and moderate noise.
