Sous Chef

Mandarin Oriental New York is looking for a Sous Chef to join our Culinary team.

About the job

Based at Mandarin Oriental New York, within the Culinary Department in New York City, the Sous Chef is responsible for culinary offerings in our MO Lounge and In Room Dining. Leading, teaching, and correcting employees, under the guidance of the Executive Chef and Executive Sous Chef, continuously striving to exceed guests' expectations while working as a team with other Sous Chefs. The Sous Chef reports to the Executive Sous Chef.

As Sous Chef, you will be responsible for the following duties:

  1. Prepare in accordance with quality, availability, and seasonality, ensuring market lists are completed daily and weekly. Assist in menu planning and implementation. Maintain and improve food standards and presentation.
  2. Organize food production in a cost-effective and hygienic manner, generate weekly schedules for kitchen staff, assist in recruitment, training, coaching, and corrective actions.
  3. Strive to improve operating procedures, find methods to reduce costs without affecting service or product quality, and maintain Safe and Sound Procedures.
  4. Develop Standard Operating Procedures.
  5. Control and be accountable for achieving Food & Labor Cost Goals, maintain food standards at reasonable costs by liaising with the Purchasing Department regarding prices, market fluctuations, and quality. Lead relevant training.

As Sous Chef, we expect from you:

  • Minimum of 5 years in luxury hotel culinary, with at least 2 years management experience in high-volume or fine dining establishments.
  • Experience in Union environments coaching union colleagues, and in multi-cultural cuisines.
  • Ability to work both AM and PM shifts.

Salary and Benefits:

  • Salary range: $64,000 to $85,000 yearly.
  • Benefits include health, dental, vision, 401(k), etc.
