Major Food Group - Sous Chef at Carbone

Major Food Group is seeking a Sous Chef to join our team at Carbone.

About Carbone: Carbone is an Italian-American restaurant created by Mario Carbone, Rich Torrisi, and Jeff Zalaznick. It pays homage to the great Italian-American restaurants of mid-20th century New York, serving delicious, well-prepared food in an elegant, comfortable, and unpretentious setting. Dishes such as Seafood Salad, Linguini Vongole, Lobster Fra Diavola, Chicken Scarpariello, and Veal Parmesan are elevated to new heights.

Position Overview: We are hiring an experienced Sous Chef with a strong work ethic to uphold the highest standards of cuisine and professionalism.

Responsibilities:

  1. Sourcing, ordering, and receiving the highest quality ingredients
  2. Developing, teaching, and maintaining all recipes and techniques
  3. Organizing a large team and holding each chef accountable for their responsibilities
  4. Overseeing and ensuring smooth professional service
  5. Maintaining kitchen equipment and following up on repairs
  6. Upholding high standards of cleanliness and organization
  7. Managing scheduling and inventory within budget constraints

Requirements:

  • Minimum 2 years of experience in a management capacity
  • Minimum 4 years of experience in a high-volume, quality-driven kitchen
  • Culinary diploma or equivalent experience preferred
  • Team-oriented with a positive attitude
  • Strong communication skills are essential
  • Proficiency in Spanish is a plus

Compensation: Salary range $75,000 - $80,000
