Sous Chef
As the Sous Chef you’ll play an essential role in enriching the lives of seniors, creating meaningful connections, and making a difference every single day.
Position Highlights
- Status: Full‑Time
- Location: 4800 Aston Gardens Way, Naples, FL 34109
Responsibilities
- Assist the chef with planning, staffing, organizing, and coordinating the preparation of all meals in all levels of care.
- Help plan menus and menu cycles according to cultural and regional food preferences, and resident dietary guidelines; adjust recipes to appropriate yield.
- Ensure compliance with assisted‑living food requirements as it pertains to state standards.
- Monitor the quality and consistency of the food, including food temperatures, portion control, palatability and attractiveness; implement changes to meet established standards.
- Assist with time‑clock management related to labor actuals and ensure weekly compliance with budget.
- Ensure compliance with resident dietary restrictions as it pertains to the community.
- Observe and work side by side with workers engaged in preparing, portioning, and garnishing foods to ensure methods of cooking, garnishing, and portion sizes follow prescribed guidelines.
- Give instructions to cooking staff on fine points of cooking.
- Assist with monthly inventory of food items in the community.
- Create custom holiday menus.
- Conduct regular quality‑assurance audits.
- Practice all safety and loss‑prevention procedures.
- Perform other duties as assigned.
Qualifications
- Associate’s degree in culinary arts program preferred.
- Minimum of three years experience as a Chef/Kitchen Manager in a food service environment.
- Successful completion of a recognized food‑safety course.
