What you will be doing:
- Open and close the line, perform precise line checks and facility walks, complete EcoSure documentation, and address any deficiencies.
- Manage high-volume service periods from the expo or wheel position to maintain food quality and presentation standards.
- Collaborate with BOH and FOH teams, conduct thorough line checks and facility walks, participate in EcoSure & Health inspections, ensuring a safe production environment.
- Hire, develop, and manage back of house employees, including scheduling and payroll reporting in compliance with company standards and laws.
- Partner with EC to manage the P&L, focusing on maximizing profits through food cost management, labor, inventory control, and overall restaurant performance.
- Maintain open communication with the FOH team to ensure adherence to TFK guidelines.
Who we look for:
- Passionate about culinary excellence and detail-oriented.
- Resilient under stress and capable of handling last-minute requests.
- Over 2 years of experience as a chef in a high-volume, full-service restaurant.
- Basic understanding of financial aspects of business operations.
- Caring, self-motivated, and capable of leading, coaching, and driving excellence.
