Responsibilities

  1. Directly supervise BOH hourly staff, fostering a culture of learning and creativity.
  2. Ensure job fulfillment, appearance, and professionalism of the team.
  3. Conduct new hire and ongoing training consistently and effectively.
  4. Maintain optimal staffing levels and participate in the hiring process.
  5. Understand P&L statements and contribute to profitability.
  6. Supervise budgets for labor, food, beverage, and controllables.
  7. Target and address problem areas, developing actionable plans for improvement.
  8. Manage waste tracking, product storage, and efficient rotation methods.
  9. Optimize scheduling and personnel management for budgeted production.
  10. Demonstrate excellent culinary skills and instruct hourly staff.
  11. Collaborate on recipe development and menu planning with Executive Chef.
  12. Execute smooth shifts, ensuring adherence to standards and procedures.
  13. Accountable for opening, closing, and daily/weekly duties of the BOH staff.
  14. Master expediting skills for consistent ticket times and perfect plate presentations.
  15. Uphold strict food quality, handling, and sanitation standards.
  16. Proactively ensure workplace safety and back door security.
  17. Communicate professionally and proactively with the front of the house.
  18. Lead by example and serve as a role model for managers and staff.
  19. Set a standard of self-accountability, timeliness, and punctuality.
  20. Understand and execute restaurant objectives and strategies.
  21. Utilize effective time management tools to prioritize tasks and meet goals.
  22. Handle daily, weekly, monthly, and quarterly priorities timely and accurately.
  23. Follow up on weekly cleaning projects and establish SOPs for efficient operations.
  24. Manage an assigned department and provide guidance to at least two individuals.

Physical Requirements

  1. Constant standing and walking
  2. Occasional stooping, kneeling and crawling
  3. Occasional ascending or descending of ladders, stairs and/or ramps
  4. Must be able to stand and exert well-paced mobility for up to 8 hours per shift
  5. Frequent, continual, intermittent flexing and rotation of the spine, elbows and wrists
  6. Must be able to lift up to 15 lbs regularly
  7. Occasional pushing, pulling, lifting or carrying up to 50 lbs
  8. Must be able to listen and speak for guest and team interactions
  9. Constant use of POS/Computer systems
  10. Manual dexterity to operate equipment
