Job summary

East West Hospitality's Viceroy Snowmass property seeks a Sommelier to lead and elevate the wine program across all dining outlets, with extensive cellar responsibilities and a focus on education and storytelling.

As the hotel’s wine authority, you will curate a 500+ SKU portfolio, collaborate with the culinary team on pairings, and deliver Forbes Five-Star service while educating staff and guests alike.

Responsibilities

• Curate, develop, and maintain a world-class wine list and program across dining outlets, bars, in-room dining, and private events; 500+ SKUs including Old World, New World, rare, and emerging regions.
• Manage cellar operations: procurement, receiving, rotation, storage, inventory; maintain Forbes Five-Star standards.
• Build relationships with importers, distributors, negotiants, and estates; source exclusive allocations and library wines.
• Author wine list, tasting notes, and pairing recommendations for guests of varying knowledge.
• Design and execute wine pairing dinners, vertical tastings, cellar tours, winemaker events, masterclasses.
• Collaborate with Executive Chef on menu engineering and seasonal wine pairing concepts.
• Apply knowledge of mixology and spirits to partner on a unified beverage narrative.
• Contribute wine expertise to cocktail development bridging cellar and bar.
• Support spirits tastings, bar activations, and integrated beverage events.
• Cross-train bar teams on wine fundamentals and the property’s cocktail program.
• Deliver Forbes Five-Star beverage service: open tableside, pour gracefully, decant when appropriate, refill promptly.
• Engage guests with educational, non-intimidating wine and spirit conversations; tailor pairings to preferences.
• Recall guest preferences and update PMS profiles for personalized service.
• Ensure service standards meet LQA criteria: proper temperature, correct glassware, knowledgeable narrative.
• Partner with management to resolve beverage-service guest concerns with empathy and swiftness.
• Develop and deliver wine and spirits education for F&B staff; elevate beverage literacy and upselling.
• Mentor staff for Court of Master Sommeliers Introduction and Certified exams.
• Maintain beverage inventory records, perform par-level audits, assist in cost analysis and reporting.
• Oversee POS accuracy for wine items and pricing; manage profitability of by-the-glass and bottle programs.
• Ensure compliance with liquor licensing, responsible service, and health and safety requirements.
