We are hiring a dependable and detail-oriented Smokehouse Operator to support our Smokehouse Department. This position is responsible for monitoring the cooking and chilling processes to ensure all products meet company quality, safety, and compliance standards.

Department: Smokehouse Operator
Hours: 12PM – 8PM, Mon-Fri, Saturdays as needed
The Smokehouse Operator plays a key role in producing high-quality bacon and smoked meat products by monitoring cooking and chilling processes within the smokehouse department. This hands-on role includes loading and unloading smokehouses and brine chillers, ensuring products are cooked and chilled to company specifications, accurately documenting production records, and assisting with hourly sanitation and food safety inspections. Monitor smokehouse operations to ensure products are cooked according to company specifications
Oversee the chilling process to ensure products are cooled in compliance with company requirements
Load and unload smokehouses and brine chillers safely and efficiently
Accurately complete and maintain weight sheets, charts, and production documentation
Assist with hourly inspections of smokehouse rooms to identify and report SSOP (Standard Sanitary Operating Procedures) deficiencies
Follow all food safety, quality, and sanitation standards
Perform other related duties as assigned
Strong attention to detail and ability to follow detailed specifications
Basic documentation and recordkeeping skills
Ability to work in a production environment with temperature variations
Ability to lift, push, or pull product and equipment as required
Team-oriented with a strong commitment to safety and quality
