• Receive, inspect and store meat upon delivery to maintain quality.
• Prepare roasts using boning knife, skewer and twine.
• Estimate requirements and help maintain meat inventories.
• Supervise other butchers or meat cutters as needed.
• Record meat received and issued or sales data.
