Job summary

Eurest, part of Compass Group USA, is seeking a Sous Chef I to assist in the overall success of the food program for Cloisters on the Platte in Gretna, NE. You will oversee culinary functions, engage in planning, ordering, inventory and food preparation for plated meals with scratch cooking from seasonal menus.

You will lead back-of-house teams, train staff, and ensure adherence to health and safety standards while delivering high-quality meals to clients and customers.

Qualifications

• 5 years of related culinary experience including 1 year at the management level.
• Experience in restaurants, hotels, corporate dining, education, military, health care, and/or related food service operations.
• Knowledge of food and industry trends with a focus on quality, production, sanitation, safety, food cost controls, and presentation.
• Ability to set up and distribute production sheets.

Responsibilities

• Assist in coordinating and participating in the preparation and cooking of various food items.
• Assist with planning and creating menus.
• Roll out new culinary programs in conjunction with marketing and culinary team.
• Assist with managing cost controls and expenditure.
• Perform other duties as assigned.
• Weekends are required.
