Job summary

Poarch Creek Indians is seeking a Senior Meat Processing Technician for our Perdido River Meats, LLC facility in Alabama. This hourly, regular full-time role requires advanced knife skills and precise beef and pork cutting, with responsibilities across trimming, safety, and quality.

The position supports a team-oriented environment, offers opportunities for growth, and requires the ability to work varied shifts, including possible travel for training. Background check is required.

Qualifications

  • Five (5) years of professional knife skills experience in a butcher shop, meat department, or similar environment.
  • Strong knowledge of beef cuts, including primal and sub-primal breakdown.
  • Strong knowledge of pork cuts, including primal and sub-primal breakdown.
  • Ability to work odd and irregular hours, as needed.
  • Must successfully pass the required criminal and character background check.

Responsibilities

  • Ensures compliance with food safety standards and plant operating procedures.
  • Assists in training and mentoring entry-level employees on knife techniques, safety protocols, and product specifications.
  • Maintains a clean and organized work environment in varying conditions (cold rooms 0°F, production areas up to 90°F).
  • Collaborates with team members to meet production goals and maintain high-quality standards.
  • Works in slaughter operations when not processing.
  • Performs other duties as assigned by the appropriate person.

Primary Objectives

The Hourly is a key line-level position responsible for performing advanced meat cutting and trimming tasks on beef and pork products with precision and efficiency. This job description is not an all-inclusive list of the duties and responsibilities of this position. PCI Employees are expected to perform all duties and responsibilities necessary to meet the goals and objectives of applicable programs and departmental objectives, as assigned.

Essential Functions
  • Ensures compliance with food safety standards and plant operating procedures

  • Collaborates with team members to meet production goals and maintain high-quality standards

Job Requirements

Compensation and Benefits
  • The starting pay will depend on factors such as experience level and skillset
