Job summary

Subway is seeking a Senior Manager, Quality, Protein to own protein quality across the United States, including deli meats, poultry, beef, pork, seafood and cheese. You set specifications, manage supplier performance with IPC, and ensure new and changed protein products launch to spec.

Ready-to-eat protein is sliced in every restaurant, so this role holds a high bar on supplier controls and catches issues before they reach the guest. Reports to the Director, Quality & Commercialization.

Qualifications

• Bachelor's degree in Meat or Animal Science, Food Science, Microbiology or related field.
• 7+ years in food manufacturing, QSR, foodservice or food retail with supplier quality and plant audits in USDA-inspected environments.
• Knowledge of meat, poultry and cheese processing, quality systems and specs.

Responsibilities

• Category quality ownership: set specs and evaluate products; hold suppliers to spec at scale.
• Supplier management: lead approvals, audits and scorecards; manage transitions to steady state.
• Commercialization & Design to Value: partner with Culinary on new protein items; lead supplier qualification.
• Ready-to-eat protein controls: verify supplier controls including Listeria and environmental monitoring.
• Complaint and data analysis: track trends and drive root-cause fixes with suppliers and distribution.
