8Eleven Modern Bistro at Union Club Hotel, a Marriott Autograph Collection property on the Purdue University campus in West Lafayette, Indiana, is seeking an experienced Senior Line Cook to lead our kitchen team.

You will mentor junior cooks, execute high-quality dishes, and uphold strict food safety and presentation standards in a fast-paced, hotel restaurant setting, with opportunities for growth across White Lodging properties.

Qualifications

• Experience with commercial kitchen equipment and line cooking.
• Proficiency in sautéing, broiling, frying, roasting, butchery, garde manger, pantry, and breakfast cookery.
• Culinary degree or apprenticeship preferred but not required.
• Ability to stand and work at a fast pace for extended periods.

Responsibilities

• Mentor entry-level cooks and oversee daily prep and production
• Execute BOH operations following F&B procedures, health codes, and federal guidelines
• Ensure proper food handling, storage, and sanitation at all times
• Help maintain food cost and labor cost targets
• Check ingredient freshness; uphold recipe standards and portion-use records
• Positively influence guest feedback through consistent food quality
• Foster a respectful, cooperative team culture
