Job summary

OPENTEXT: OMAKAI is hiring an Assistant General Manager for our Fulton Market Chicago location. You will lead dining room operations, supervise frontline staff, and ensure service excellence in a fast-paced sushi concept.

The role oversees guest experience, inventory, and training, with a focus on accountability and teamwork. This is a full-time, 30+ hour position with competitive base pay and quarterly bonuses.

Qualifications

• Three years of restaurant experience required, including at least one year in a front-of-house management or shift lead role.
• Experience leading, coaching, and holding a service team accountable during peak volume.
• Certifications in manager, alcohol serving, and harassment prevention (training provided if needed).
• Japanese cuisine knowledge is a plus but not required.
• Able to learn and memorize the full menu with ingredients and pairings.
• Strong scheduling, labor, and inventory skills; comfortable with cash handling and POS.

Responsibilities

• Lead and hold the entire team accountable, including Floor Managers, each shift.
• Oversee floor operations in real time; manage seating, food running, and pacing; resolve guest issues.
• Step in as senior manager on duty when General Manager is away; own defined Areas of Responsibility.
• Enforce standards, policies, and safety training; conduct performance coaching.
• Assist with inventory counts, vendor orders, and training new hires.
