Denali Universal Services seeks an experienced Seasonal Head Cook for a remote camp on Alaska's North Slope. You will oversee daily kitchen operations, plan menus, train staff, and manage inventory while ensuring safety and quality in a high-volume setting.

Expect a 3 weeks on/3 weeks off rotational schedule, 12-hour shifts, and 84 hours weekly with provided housing and meals. AP-friendly and able to work in a demanding remote environment.

Formación

• Must be 18 years or older.
• Able to commit to 3-week rotations away from home.
• High school diploma or GED.
• 2–3 years of high-volume food production and supervisory experience.
• Valid driver’s license.
• Proficiency in Microsoft Office.
• Able to read, write, speak, and understand English.
• Comfortable living in a remote camp with shared housing.

Responsabilidades

• Oversee daily kitchen and food service operations.
• Supervise, schedule, train, and support kitchen staff; housekeeping in smaller camps.
• Plan menus, prepare meals, and oversee food preparation and service.
• Maintain food quality, cleanliness, and service standards.
• Conduct daily pre-meal checks of food service areas for cleanliness, stock, and appearance.
• Manage food and supply ordering, inventory, storage, and stock rotation.
• Monitor food production and minimize waste.
• Follow and enforce food safety, sanitation, HACCP, and ServSafe requirements.
• Lead safety meetings and ensure staff follow safety procedures and PPE.
• Maintain positive relationships with clients, customers, residents, and coworkers.
• Respond to customer feedback and help improve food quality and service.
• Complete required reports, paperwork, and training.
• Coordinate catering, holiday meals, and special events.
• Follow company and client policies and requirements.
