Job summary

Halperns' Steak & Seafood in Orlando is seeking a Meat Cutter to clean, cut, portion, and merchandise boneless meat products according to customer specifications.

You will read instructions, perform quality control checks, and use knives and cutting tools in a fast-paced environment while maintaining safety and accuracy. This is a hands-on role within a dedicated team.

Qualifications

• Proven meat cutting experience and ability to trim and portion boneless cuts.
• Ability to read and follow customer specifications and shop instructions.
• Strong attention to quality control and safety procedures.

Responsibilities

• Clean, trim, slice, and portion subprimals of beef, pork, lamb and veal.
• Inspect products for defects and communicate issues to supervisors.
• Weigh and tag meat portions, adhere to product specs, and assist with other duties as needed.

Position Summary:

Responsible for cleaning, cutting, portioning, and merchandising all boneless meat products.

Essential Functions:

• Cleans, trims, slices, and portions subprimals of beef, pork, lamb and veal for future processing.
• Inspects meat products for defects, bruises, or blemishes.
• Accurately reads and comprehends all customer specific instructions.
• Performs Quality Control checks and communicates with supervisors and managers regarding any defects.
• Separates meats and byproducts into specified containers and seals containers.
• Uses knives, cleavers, and other equipment to perform meat cutting and trimming.
• Weighs meats and tags containers for weight and contents.
• Follows the company's detailed product specifications.
• Performs other duties as assigned.

Knowledge / Skills / Abilities:

Must have working knowledge of production equipment. Ability to portion all boneless cuts of meat in an accurate and timely manner. Ability to reduce processing costs but cutting and sizing portions accurately while continuing to meet customer specifications. Ability to problem solve in terms of trimming and product substitutions. Ability to work in a fast paced, high pressure, challenging environment Must be a team player and possess a positive attitude. Ability to effectively communicate, both written and verbally, in English. Must demonstrate the ability to understand the Meat Buyer’s Guide specifications as they relate to the company’s internal product specifications.
