Job summary

Halperns' Steak & Seafood in Orlando, FL is seeking a Meat Cutter to clean, cut, portion, and merchandise boneless meat products. You will work with knives and production equipment to prepare subprimals for processing, while ensuring adherence to customer instructions and company standards.

The role requires accuracy, speed, and strong communication to coordinate with supervisors and maintain quality, with opportunities for career growth within a family-oriented culture.

Qualifications

• Must have working knowledge of production equipment.
• Ability to portion all boneless cuts of meat accurately and efficiently.
• Ability to read and follow customer instructions.
• Ability to perform quality control checks and communicate defects.

Responsibilities

• Clean, trim, slice, and portion subprimals of beef, pork, lamb and veal.
• Inspect meat products for defects, bruises or blemishes.
• Read and follow customer specifications.
• Perform quality control checks and notify supervisors of issues.
• Weigh meats and label containers for weight and content.
• Follow Halperns' product specifications.

Position Summary:

Responsible for cleaning, cutting, portioning, and merchandising all boneless meat products.

Essential Functions:

• Cleans, trims, slices, and portions subprimals of beef, pork, lamb and veal for future processing.
• Inspects meat products for defects, bruises, or blemishes.
• Accurately reads and comprehends all customer specific instructions.
• Performs Quality Control checks and communicates with supervisors and managers regarding any defects.
• Separates meats and byproducts into specified containers and seals containers.
• Uses knives, cleavers, and other equipment to perform meat cutting and trimming.
• Weighs meats and tags containers for weight and contents.
• Follows the company’s detailed product specifications.
• Performs other duties as assigned.

Knowledge / Skills / Abilities:

• Must have working knowledge of production equipment.
• Ability to portion all boneless cuts of meat in an accurate and timely manner.
• Ability to reduce processing costs but cutting and sizing portions accurately while continuing to meet customer specifications.
• Ability to problem solve in terms of trimming and product substitutions.
• Ability to work in a fast paced, high pressure, challenging environment.
• Must be a team player and possess a positive attitude.
• Ability to effectively communicate, both written and verbally, in English.
• Must demonstrate the ability to understand the Meat Buyer’s Guide specifications as they relate to the company’s internal product specifications.
