• Manages labor costs by evaluating labor needs against projected sales during the shift.
• Reviews budget and P&L on a monthly basis.
• Promotes customer satisfaction to build sales.
• Monitors costs by supervising crew prep, production and procedures.
• Tracks waste and controls theft.
• Communicates issues in sales/profit to GM/DM.
• Supports execution of the sales and profits plan.
• Maintains food quality by monitoring crew performance.
